Seating Capacity
Layout is one of the most important factors when
designing a new restaurant. Your bottom line is based on seating capacity,
which is determined by table size and shape. For example, a round table allows
you to fit more people at one table, but square or rectangular tables can be
easily combined together to accommodate large parties or separated to fit a large
number of smaller parties. They provide greater flexibility to deal with a variety
of seating challenges. The "flow" created by your restaurant's layout is a key
element that will ensure your wait staff are not disturbing seated patrons while weaving between tables.
The type of food you serve in your establishment is also an important factor in determining how many people can be seated at a table of a certain size. If you are serving only coffee or dessert, than a 30"X30" table can likely accommodate four people. However, if you are serving full meals, the same size table might comfortably fit only two people.
